Lipstick Heels and a Baby

Sun Dried Tomato and Feta Quinoa

I came across this recipe on diethood.com and loved it! I changed a few things for my liking but over all it is very similar to her recipe!!! Hope you enjoy!!!!
  • What you will need::
  • 1 1/2 cups quinoa
  • 1 cup of water
  • 1 1/2 cups chicken broth
  • handful of chopped sun dried tomatoes, the dried ones (not in oil)
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh chopped basil
  • 3 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • Pinch of Pepper

  • In a medium sized saucepan combine the water and quinoa; bring to a boil. Once boiling reduce the heat. Cover and let simmer until quinoa is tender, about 15 – 20 minutes.
  • Remove from heat and stir to fluff.
  • Mix in the sun dried tomatoes, feta, and basil.
  • Mix lemon juice, olive oil and pepper all ingredients in a small seperate bowl; whisk together until thoroughly mixed.
  • Pour mixture over the quinoa, toss, and serve.
