When we are having friends over for dinner or even just a few cocktails we love to have something out for them to snack on. Typically we are coming in from the pool or beach and I do not have time to whip up a dip or large appetizer. This recipe is easy, refreshing, has a little kick and can be made in just minutes! I personally love to pair this appetizer with a glass of red wine such as a cabernet or a malbec but you can pair it with your favorite cocktail of your choice.

What is even better is the boys absolutely love this appetizer with a cheddar cheese that doesn’t have any spice to it! Okay – so to make one of our most favorite appetizers to have out for friends and family its crazily easy!! First, choose a cheese of your choice. We always go with a horseradish cheese to give it a little kick. It adds a great contrast to the butter flavor of the cracker and the sweetness of the watermelon.

Next we add on a watermelon slice and a slice of avocado. The avocado gives it a creamy texture and the watermelon gives it a sweet crunch. It may sound a little crazy but its absolutely delicious and refreshing in the hot summer months. We sometimes serve it with red pepper and/or siracha on top as well for our friends who like an extra kick. I, however, am a huge whip when it comes to spice so the horseradish cheese is plenty for me!
